I made this because I thought it looked really good - despite the fact that my husband and I don't like mushrooms. But I made it following the directions (even the mushrooms and we LOVED it!!! I used whole wheat pasta, and it was great. I warned husband that there were mushrooms and he liked it even though. I also made this and took it to a friend who just had a baby. A whole batch could last two people several days if eating it as a side dish. Very good and going (right now to make it again!

I love mushrooms, so this recipe was hard to resist. I used only half the mascarpone cheese, and it was still delicious. Can be a main or side dish. Great!

THE MASCARPONE MADE THE DISH. MY KIDS DON'T LIKE PEPPERS, BUT GUESS WHAT - THEY DIDN'T KNOW THEY WERE THERE.

I was very excited to have a veggie bolognese and i thought, healthy alternative. I bought all the ingridients but was very surprised to see 130 calories and 9 grams of fat per tablespoon of marscapone and this receipe called for 1/2 cup. I added only one tablespoon and a 8oz can of tomatoe sauce. I think i could have eliminated the marscapone all together, the flavorful porcini save the receipe.

I ws very excited to find a simple, accessible , and ultimately delicious veggie take on this traditionally meaty ragu. I like the touch of the smoth and creamy mascarpone in place of heavy cream. It's easy to overeat on this one, I found, so eat it slowly and savor its deliciousness and richness! The only thing I will change is to use a fettucine or tagliatelle instead of a round pasta.

I was disappointed. Normally Giada's recipes are amazing. This just didn't hit the spot. I would use less thyme and maybe more bell pepper. This would be great if some veal was added. All the prep for an ugly and boring dish isn't appealing to me. If you really like mushrooms you will probably like this dish a lot.
