We love this dish! I make this all the time and we don't miss the meat! It is a great alternative to a meaty pasta when you need a little change. I don't always have freash herbs so I sub dried and it is still great!

In a house of meat and non-meat eaters this dish is loved by both. The carrots need to cook longer to soften properly but the recipe is quite easy and very tasty. Good for leftovers. We leave out the expensive dried porcini mushrooms and it is perfectly delicious without them.

my best friend and I made this for a couples dinner she hosted. she had watched the episode where Giada had made this and we wanted to try it. other than her being a stickler for timing and following directions to a T, nothing was wrong with this amazing sauce! the veggies were a big on the crunchy side only because she sauteed them to the time on the recipe and ours may have been cut a bit chunkier than hers were. you have to be able to cook some things longer or shorter depending on your stove, size of veggies etc. I loved, loved, loved it even with the crisp bites i kept having! That's saying a lot since I have never had a "vegetable" based pasta sauce, being Italian & only eating meat sauces i was surprised how much i loved this. I cannot wait to try this again, i want to make lots to be able to freeze some. I literally have been craving this for about 2 months, since we've had it so thought i'd write a review as well! Try this whether you like vegetable sauces or not.

I convinced my husband to participate in Meatless Mondays with me, and this was one of our Monday night recipes. He loved it, and so did I. Plus, it was really easy to make. Perfect!

I made this for a group of friends. They absolutely loved this dish. I have to say, even the kids that didn't like mushrooms, loved it. Loved it. Keep the receipes coming.

We made this pasta for the first time during a family reunion weekend. There are a couple of gourmets in the family, so we were worried about how it would come out. Fortunately, the dish was fairly easy to make and it was a huge hit. It was eaten up very quickly! We had to go to Trader Joe's to get the Mascarpone, but it's an important ingredient so we didn't want to substitute something else. The porcini mushrooms added so much flavor and the dish felt meaty, even though it's totally vegetarian. We served it with an arugula salad, garlic bread, and some good wine. We will be adding this to our regular rotation.

This is one of the most amazing things I have ever cooked. My boyfriend thought that there was meat in this dish because it is so rich! Yumm!

This is excellent, my whole family loved it even my daughter who does not like mushrooms (she picked them out but loved the mushroom flavor. I made a few substitutions based on what I had on hand...flip flopped the dried and fresh mushrooms, using assorted dried gourmet mushrooms and fresh porcini. Costco sells a large container of the dried assorted mushrooms and this makes it more affordable (probably under $2 for the amount you need for this recipe. The other substitution was cream cheese for mascarpone. Next time I try this recipe I will use the mascarpone to see if it is even better. Great job, Giada, as usual!!! Love your recipes.

Love this recipe. Easy and fast. I let the porcini mushrooms steep for 20-30 minutes and used the broth...made the sauce extra brown and rich. Divine.
