This was really a good recipe. I will definitely do this recipe again! Served it with wild rice and pecans and sauteed spinach with mushrooms. Excellent!

    Tasted good.
I always stick to a recipe the first time - alter after that.
Vineger a little overpowering. I would reduce that & add to taste. I think a little Rosemary would be great in the sauce!!

I actually made pork loin cutlets and served with the balsamic sauce. It was definitely tasty, but I'd cut back on the vinegar a bit.

this pork was amazing. but who would cook a pork loin to 140 degrees?? it has to be cooked much longer in order for it to be cooked through. Overall, the dish turned out great when paired with risotto and kale salad! the sauce is perfect for balsamic vinegar lovers(:

So, I made this on Easter Dinner. The vinaigrette was very yummy, but could have used a bit less balsamic. That was a tad too much. Plus, I had to go pick up a guest, so the pork was a bit overcooked, but the vinaigrette really helped the toughness.
With the leftover pork and vinaigrette, I made a stir fry with carrots, broccoli, onions, mushrooms, and such... It was very good. Just cut up the pork, and added that sauce at the end.... mmmmm

I was actually just looking for some good temps to roast my pork loin and came across this gem from Giada.

I got my pork loin from Costco and its amazing how well this cooks! Sliced thinly like a turkey breast, it can make anyone who has dry pork loin a believer again :-

This was a great recipe. Super easy to make and really simple ingredients to find at the store even if you didn't already have them on hand.
The Roasted Garlic Vinaigrette is something you could even make with other various meats! Loved it!
