    Here is the way to do this recipe easily:

    Saute the zucchini in olive oil. Before they are cooked, add your chopped sundried tomatoes with a tablespoon of the oil from the jar. Remove and place in bowl with other ingredients. Add chicken pieces, saute in oil and add about 1/4 cup white wine. Add to bowl with balance of ingredients. I did not have any parmesan on hand and used shredded mozzarella. Yummy!

    I loved my finished product with this recipe. Much more healthy than Macaroni Grill's version. I cut out the parmasean and added fresh mozzeralla balls cut up and also added shallots, mushrooms,sauted spinage, a little crushed red pepper, and olive oil. The only thing bad about this recipe is the lack of info, but thanks to the comments from other reviews I got the general idea.

    This was super easy to make and you can customize the flavors to your liking (add crushed red pepper for more spice. I was also able to use the left over roasted tomatoes for my home made salsa. The ingredients were healthy and mixed well together. I made this for 2 and the left overs were just as good the next day.

    The whole point of her show is that you get three different dishes out of the same ingredients, the directions for roasting the tomatoes and zucchini are in the first recipe from the episode. The recipe is called Grilled Chicken Breasts with Fire roasted Tomato Sauce, Roasted Zucchini with oregano and lemon.

    For the veggies: Pre heat the oven to 400, like she says. She halves both the plum/roma tomatoes and zucchini lengthwise, puts them flesh side up on a baking sheet or two, sprinkles them with salt and pepper. To the zucchini she adds dried oregano, the zest of one lemon, and the juice of half a lemon. and put them in the 400 degree oven for 30 min.

    i saw this recipe on tv and when i got the recipe on line it did not tell you
    all about the roasting of the veg. like she did so how could everyone no about
    that. that just no right.

    Can someone please tell me what spices are used for this recipe. I watched the show half-distracted and when I went to read the recipe it does not say how to cook the zucchini (I thought she roasted or grilled it or what spices are on the zucchini and tomatoes. I thought she put something on them. Another reviewer mentioned "lemony" zucchini so any info you can provide would be appreciated since I would like to make this asap.
