These bring back memories. Very easy to make. Light and fluffy. Next time I will increase the Cayenne pepper to at least 1/4 tsp. to give a bit more bite. Also if you want to save some time making the Cilantro Tartar sauce, you can skip the egg and oil and use 1 cup of mayo instead.
