Though more like a garlicky creamy italian than a true caesar dressing, it's still delicious! My husband begs me to make this dressing and would happily eat it on everything. For more authentic caesar, definitely use anchovy paste and add parmesaen cheese. If you're not a fan of garlic, cut back on the garlic by half.

Because you use 1/2 cup of olive oil, it tastes a little olive oily. But, that doesn't get in the way and the my family loved the dressing. It's not over the top, but you can still taste it.

I thought that substituting the mayo for an egg would make this dressing greasy, but it was great!!! Very good and easy! Would definitely make again.

We really enjoyed this recipe. I added three times the amount of vinegar and about the same amount of lemon juice. It had no tang without it. Very good, the recipe makes a ton of dressing. Will definitely make again.
