My cheese sauce was "grainey" not smooth. What did I do wrong?

One of the best Mac n cheese recipes I have made....will make this again. For a crispier topping, toss about a cup of breadcrumbs with some melted butter and parsley to top the casserole....then bake until bubbly.

I made this last year for our New Years Day (Christmas Celebration. Everyone loved it! There was absolutely none left. I did freak out a little when I tasted it and was bitten back by the amount of salt; just added a little more cream and sweet milk and that fixed the problem. For those who think the recipe is salty, you're right; but read the "disclaimer" I guess you could call it at the bottom of the page... Its going to be normal fair for our family every year!

I've been making this recipe for over a year now. Myself and everyone who I serve it to loves it. I've read some comments that say the recipe is too salty. Perhaps they didn't actually measure the cheeses out properly? Asiago and Romano are strong tasting cheeses and can be quite salty if you over do it. Plus I use kosher salt, which is better for cooking instead of the cylindrical "iodized" variety. Hope that helps.

I had a special guest for the weekend - a 13 year old girl and I was looking to score points. No question Mac & cheese could seal the deal. I found this recipe and thought asiago & romano might be a bit much for a younger palate and opted to use monterey and colby instead.

I got all my ingredients together and was ready to get busy and found I had no flour so I used two eggs instead and kept my fingers crossed.

I split the recipe into two slightly smaller pans so the amount of bread crumbs was perfect. I saw a few people commenting about it being too much. I also toasted the bread crumbs under the broiler at the end of the bake time until they were a light brown.

Dinner was served and there was not a peep while the mac and cheese was gobbled down by the adults as well as my special guest. a home run.

The second tray was sent with my little guest when she went home and her Mom just asked me for the recipe. Quick & delicious.

a good recipe, but anything with cheddar can be kicked into high gear by adding a few tablespoons of crumbled bleu cheese in the mix.

The prep time for this recipe was rediculously quick! The cook time, just as fast. The next thing I knew...I had Mac & Cheese and was cleaning up!

Now, the only adjustments I would make to this recipe is to use a milder cheese and scale back on the amount of breadcrumb they tell you to use in the recipe. The next time I make this, I'm going with a yellow cheddar cheese and keep it simple.

Otherwise..I have no real complaints. Very good! :

This recipe is the bomb! All my friends cant believe that I made it from scratch. It's very easy to make in no time at all. I always add a little extra to the recipe to make it my own. Tanks for sharing it.
