VERY VERY good!!! Even my 9 YO son loved these. We all went back for 2nds. The sauce is to die for! If you make these, you have to make the sauce as that really makes the recipe. My hubby ask me not to make my crab cakes just make this for now on. I have made this a handful of times now and this last time I chopped the spinach and that made all the difference in the world. My daughter usded to not like the potatoes when I would make this but had two servings of them last night. It disperses the spinach and makes the potatoes a pretty green.

This is a delicious dish! I have made it three times now and it has been good all three times. The first time I didn't see to chop the spinach <very important>I too was confused about amount of spinach first two times...this time I chopped the spinach well, in batches with my food processor. Big difference! I followed the recipe exactly this time and it turned out very good! Only one egg and one cup of bread crumbs in the mix. I don't think it is intended to use entire 2 cups of breadcrumbs, second cup I used to roll cod balls in and then flatten to make patties. I too let them rest in the frig for thirty minutes or so before frying. I had zero problems with patties maintaining their form.Also, this dish is intended to be eaten all together the flavors really compliment each other so if you plan on leaving anything out, I would not bother with this recipe.

I made this last night incorporating reader reviews and comments. It was absolutely delicious. Rachel Ray, you should revise the recipe! If I had followed it as written, I might not be happy. The onions and celery needed to be sauteed and I used 3 eggs to get everything to hold everything together. I used only a few ounces of spinach which I microwaved a bit to get it to soften because my potatoes were cool by the time I got to the end of the recipe. I would revise the time to prepare to about an hour.

These croquettes and red pepper gravy are out-of-this-world good! I used 1/2 cup each of the celery and onions and cut them in a small dice. I also used two eggs. The trick to keep these patties from falling apart is to put them in the refrigerator and let them get really cold before coating and cooking. I had to adjust my cooking temp a little to prevent burning; cook time was 4 minutes on each side, and they turned out crispy and deep golden brown. I was out of potatoes, so I substituted Basmati rice with butter and a little grated Parmesan cheese, which was delicious with the croquettes. The red pepper gravy is insane--amazing how something so simple can be so incredibly delicious. My husband said this was one of the best dishes I've ever made.

This meal was delish! Only change I made was to add another egg, not really a big deal, you can tell when you're mixing the ingredients that you need something more to hold the cakes together. Will be having this meal more than once, thanks Rachael!

In order for this recipe to work, and as others have suggested, it needs a few alterations... so let me re-cap what I consider the essential changes.
First... it requires nearly three times the 30 minutes. In addition, the veggies should be sauteed until translucent before adding to the flaked fish. Most importantly, two eggs are required to properly form the cakes.
For the potatoes, the stated amount of spinach is far too much... just use your own common sense when adding to the potatoes.
Otherwise, these are absolutely delicious...

Am glad I read to add a 2nd egg to this. I do think next time I'll saute the onions a bit like suggested, though it was ok without doing that. I only did a few handfuls of spinach, a pound would have been insane! I always heat my butter and half/half before adding to potatoes and it really needs that this time to help wilt the spinach.
