Loved them! They were a hit at a some receptions I catered last year, and they are making a repeat appearance as a result this year

The first time I made these, the polenta tartlets were too wet and I had to cook them for several more minutes before I was able to add the chicken and pesto. I loved the flavor of the chicken with the pesto. I have used homemade pesto and good quality store bought pesto; both worked well. The 2nd time I made this, I didn't use the polenta tartlets; instead I used mini phyllo dough cups stuffed with chicken mixture. They were delicious and were a big hit.

Had trouble finding the instant polenta at my grocery store. Used pie crust cut in 2" rounds instead. Baked them in cupcake pans to make tartlets. Cooled and added the chicken mixture with a little added parmesean. Everyone loved them! Definitely a keeper.

Simply amazing... I made them for a Christmas carry-in, and people just absolutely loved them!! I sprinkled a little more shredded parm on the tops too, which added a little more saltiness.

Amazingly yummy. Followed the directions to the letter and they were a hit. Loved, loved, loved the polenta base. It was creamy and cool while the chicken was herbacious and warm. The cranberries add just the right touch of sweetness and tang. So good! We will be adding this to the family faves.

I used pre-made polenta from the grocery store...found an excellent brand of pesto from our deli, and added a tiny bit of shredded parm cheese to the mixture. I put them together and then roasted them in the oven for about 15 minutes on low. It was delicious!
