DELICIOUS. easy to make too. However, my caramel didn't cover all of the bottom of the pan because it hardened so quickly. but tastes SO GOOD

I made this dessert last night and it came out great. I did not have coconut, or coconut milk on hand so I used 1/2 cup of half and half and 1 cup of 2%. My husband and I really enjoyed this flan recipe. I was very easy to make. Enjoy.

This was really delicious! It was extremely easy to make, and it looked professional! I've made it twice now. To see how to melt the sugar, I watched the Paula Deen video on caramelizing sugar, which is what you're doing (available on this site because I'd never done it before, but it worked out well, even without my candy thermometer (it broke, I saw when I pulled it out of the drawer. Know that if you don't fully coat the pan's bottom with the caramelized sugar, it's okay--mine spread over the little hole while it was cooking. If you want to cool this quickly, put it on a raised cooling rack in the fridge and then when you're ready to serve it, put the bottom of the pan in warm/hot water so the caramelized sugar will "let go" before you tip it over.

I'm a bit confused about the coconut milk. I have the Silk coconut milk in a carton. Will this work in this recipe? I gave the recipe 5 stars so I could ask this question, but it sounds delicious!

I made this Coconut Flan recipe at a BBQ with the family. We are true Puerto Ricans and have been eating flans all our lives. We all thought the same thing - this is by far the BEST Flan we have ever had! Incredibly luscious, while still light enough to keep you going back for more!

It's a wonderful recipe. I tried already and it's very tasty. i use the real coconut milk, not the tin of coconut milk that have preservatives. i recommend the real coconut milk from the coconut. it gives a real taste to the flan.
Paula, you could real give good recipes, i hope you make different kind of flans in your show.

This is a great recipe,I made it for a party and people loved it, caramelizing the sugar like Paula did is the way I have done it for years,it's so easy I don't understand how anyone would have trouble with it, use low heat, stir, swirl it around the pan, it's ok the caramel to crack it's going to melt in the oven anyway, don't use glass.Too much humidity in the air could keep the sugar from melting, it's the only problem I have encountered caramelizing sugar. You don't need water.I respect people who don't like too sweet, but really this flan is right on the sweetness, it's dessert!
