Upon reading other user reviews, I prepared this salad with the following changes: use 4 ears of fresh corn cut from the cob -- crispier end result and toasts better; use both tablespoons of oil up front to toast corn kernels; use red onion in place of red pepper, and slice thinly into ~1" pieces; high quality roasted salsa is key to an excellent salad -- I used a "smoky" roasted salsa from Mrs. Renfro's; upon toasting the corn, allow to cool slightly, then toss everything together.
EVERYONE loved it! Also, IMO, these quantities would be appropriate for 2 servings, not 4.

I don't usually like corn but this recipe is delicous! I used canola oil instead of vegetable oil and I used Paul Newmans mild salsa. I used a frozen corn mix of yellow and white corn. It is so simple to make. I will probably make this for my next pot luck.

It was easy to make, great taste and will be making it again and again. Finding roasted tomatoe salsa was my problem. WalMart and Publix didn't have it, but Winn Dixie has it.

My BF made this as we hosted our first Thanksgiving. My whole family loved it and I printed out the recipe for all of them. Next time I think we will add a little jalapeno to make it even hotter!

I made this for the first time on my family camping trip. It was such a big hit that even my 3 year-old nephew ate every last piece! I wasn't able to get roasted tomato salsa so I used fresh salsa and one roasted bell pepper that I bought already prepared. This is a fantastic semi-homemade preparation.

I had the whole recipe ready to go but when I opened the jar of salsa, it smelled awful. Not rotten or anything but - fake - not fresh. I whipped up a little of my own salsa and proceeded with the recipe. If you want to make this, make sure you do your own salsa. Nothing in a jar comes close except Frontera salsa and I couldn't find any at the store taht day.

This was fantastic. I made it for my family, and it was probably one of their favorite things I have ever made. However, I also added 2 cups of brown rice, and doubled the amount of salsa. It was SO delicious.
