It was very easy to make this recipe. However, there was a problem. Like others, I had a hard time to make chocolate melt. It seems that I should have used candy bars instead of chips. It takes more time to melt and it was too thick to work on.

Seen this recipe on the Cooking channel, but there is no place on their website to post a comment. Made these for Father's day last Sunday. It was so easy it was ridiculous. Like one of the other reviewers said the caramel started to bubble around the outer edges, so I took them out after 8 Mins. exactly like it said to. Not all the caramel looked melted, so I moved them gently around with a toothpick. Popped them in the freezer for a few minutes and warmed the bottom of the pan with my hands and they came right out. They only other problem I had was the white chocolate did need to be thinned out with cream, and still ended up kinda gooey after it set up, the bittersweet did not. As long as I kept the bowl of melted chocolate on top of the pan with the hot water it stayed the consistency I needed for dipping. Not a big fan of white chocolate, but my husband is, so next time I will do semisweet and bittersweet if it's for company. The bittersweet was their favorite. Thanks for introducing me to a new type of chocolate Giada. I have never used bittersweet before.

The only problems I had were that the carmel was not melting like it should of. Some of the carmel was bubbling, which it the recipe said not to let happen, but then some of the carmel was not melting at all. When I put them in the fridge to set, the chocolate never really set. they came out gooey, even left after leaving them overnight in the fridge, chocolate never became hard. Pretty messy to eat.
I will try one more time since they were so easy to make. Not bad tasting, but some were to hard to eat. I am still a huge fan of Giada.

I was very dissapointed because they did not turn out at all! The caramel after all the tedious cutting of each one stuck to the pan which i of course sprayed as directed. It took hours to get it all out of my muffin tins. They came out all crumbled and broken. My chocalte after adding the cream turned the consistancy of brownie batter. I had to throw everything out and had no homemade candy to bring to the family gathering. My fault for trying a new recipe at eight o'clock on christam eve night. Oh well, at least I had Paula Deen's apple caramel cheesecake bars! Everyone loves those!!

these were a cinch. i think maybe some of these people should buy better muffin tins so they don't have such a hard time. mine was great! $7 at target and it worked like a champ. don't forget to spray with nonstifck! and, how did Jaime get chocolate on the floor??? she should practice dipping fruit and stuff in chocolate. that isn't the recipes fault. well, when you make them you can definately only have 1-2 of these because of the sweet factor. my whole family thought they were great. happy eating!

Use a greased silicone baking pan. Put them in the freezer for 5 to 6 minutes. They pop right out without the need for any utensils. If your chocolate is turning to cement, add more cream and stir vigorously. Be sure that your cream is room temperature or even a bit warmer. My wife made this recipe and she does not cook or bake.

They looked fantastic up until the chocolate covering. It was messy, and the clusters did not taste very good. I do not recommend this. It was a HUGE mess and tons of chocolate covered the floor. It was a sticky recipe, and I am sad I even tried it.

I thought this recipe was so easy to make. My 5 year old helped me fill the muffin tins with the almonds and caramels. We made it into a math exercise. The clusters were a tiny bit difficult to get out to the tins, but I used a knife to catch an edge and they just flipped right out. My only problem is that they are so delicious that they are addictive. For me, the clusters look exactly like they do in the picture. I feel bad for those of you who did not have good outcomes since these are so incredible.
