I accidentally used salad dressing - and light at that - but this recipe turned out to be amazing.

I was stuffed before I could finish the whole sandwich, but I just had to finish off the bread with the red onion mayo on it.

    This recipe's a keeper!

I made this sandwich for a Sunday lunch. It was very good, with the onion mayo perhaps being the star. The only complaint I have is how LONG it took to make this sandwich from start to finish.

This sandwich is pure genius. I didn't try the mayonnaise; instead, I used a thin layer salad dressing. The sandwich is already full of flavor, so you don't need much.

I loved the onion mayo and will probably use it on other things. On a whole I liked the sandwich but I used sourdough bread and by the time I grilled it so the cheese melted the bread was too hard and not easily chewable. Next time I will try a heartier but softer bread and maybe I'll use ham instead of bacon.

I was helping my girlfriend (who is culinary challenged with preparing a baby shower. I thought as much as I love Paula Dean and her recipes, that I would look for something she offered in the easy category and needless to say I hit a home run! The women loved them and I got allot of attention too. The sandwiches were easy and quite delicious.

p.s. I did let everyone know it was a Paula recipe [:

These sandwiches were excellent. Everyone in my family, including the kids, loved them. I used my panini maker and the sandwiches looked and tasted like something you would pay good money for in a restaurant. The red onion mayo is flavorful and delicious and definitely makes this sandwich. Absolutely a keeper for casual, weeknight dinners or lunch!
