    I agree w/the other reviewers that the flan isn't particularly coconutty but next time I'll add a tsp. or 2 of coconut extract. Other than that, the flan is AB FAB, and I'll make it again and again. You just have to wait a VERY LONG time for the sugar to caramelize under medium heat. It also helps to take a heat-proof brush, dab it in water, and brush down the sugar crystals that form on the side of the pan. The sugar gets absolutely crusty looking before it caramelizes, and you think it's never going to do it.
    The cookies are good-- not terrific, but I did brown my coconut before adding it on top of the cookies. They come out almost like tuiles and are a nice accompaniment to the rich but wonderful flan.

    We loved it!! All you have to do is wait a little longer and the sugar will brown. It was a very delicious dessert. I am so making it for my daughters birthday BBQ. Thanks Sandra!

    this sugar will never turn brown..after 3 tries..you have to add about 1/3 teaspoon of lemon juice to get the color

    I JUST WANTED TO SAY THIS WAS GREAT, EASY AND INSTEAD OF USING A 9-INCH PAN I USED RAMAKINS AND IT WAS GREAT! I AM MAKING IT AGAIN THIS SUNDAY! THANK YOU THANK YOU !!!

    Sandy, I love you and your shows, but you must have been hallucinating when you carmelized your sugar. No wonder you didn't show it on the show. After scrapping the first two, I used the recipe from Goya that another person posted, thank you very much. By that time I didn't have time to allow it to become brown, but it would have, so I used it anyway and it wasn't what it could have been. EVERYONE, save yourself the time and use the Goya recipe or another method. The flan was good, but not enough coconut flavor. Next time I'll use some extract, if there is a next time.

    I loved this recipe! Although coconut milk is high in saturated fat it is a great dairy alternative for people that can't have milk. I would make this again and again. I actually prefer that its made with coconut milk. I ended up making the crispy coconut cookies larger and cooking them in the oven longer. Everything came out so tasty and looked beautiful!

    All I can say is that of course it has alot of the cream and eggs and some would say it's not that good for you, but come on it's not like we are having Coconut Flan everyday well at least my family isn't. Sometimes I think People just like giving Sandra a bad time... If you don't like her don't even bother to make the food!! I though it was easy to make I did cook it alittle bit more but hey every oven is different! I did toast some coconut to put over the top and it was perfect and myhusband loved it for his Father's day dessert! Oh and I would make this again!! Just not tomorrow!

    Coconut milk has more fat and more saturated fat than heavy cream! Even if it's a savings of a few cents, your body will be paying the price! Three cups of coconut milk has 650% of your recommended intake of saturated fat, so even one slice is two thirds of your limit for the day, not even counting the eggs!

    This was really easy to make and although it did take about 1 hour and 15 min to set up it was worth the wait. I let it sit over night and it set up perfectly. Only down fall was the amount of eggs it took. Definitely will make again!

    This recipe was a total flop even though I followed the instructions to the letter. The only difference being that I used a 9 inch cake pan instead of a 10 inch. It never set up, and I baked it for over an over. I will not bother with it again.
