This has become our absolute first choice when we want to wow our friends! However, we made quite a mess when we actually tried it directly on the grill. So, now we marinate a 3/4" round of provolone overnight in a generous amt of olive oil, garlic and lots of fresh herbs--anything goes. Then we just dump the cheese, oil and all, into a 6" cast iron skillet. We then grill it until the cheese is bubbly and the edges begin to brown. Serve right in the skillet, with bagette toasts rubbed with a garlic clove. Rustic, simple and delicious! Thank you, Michael!

Made this yesterday from memory and couldn't remember the exact marinade so I ended up using basil along with the rest of the ingredients - it was fabulous. I also couldn't get any good quality provolone, so I did two batches - one with Asiago and one with aged white cheddar. Both were big hits. Can't wait to experiment with other cheeses too!

This was so easy and a great hit at my annual BBQ. The key though is to get GOOD Provolone. Very nice and simple. I use charcoal and this worked well for me!

This was very good and certainly easy if you already have the grill fired up. Just eat it right away or the cheese cools and becomes solid again.

The spice combination complimented the cheese so well. It was wonderful. I would serve it at any party. And it is fairly uncommon so I think people would ask me about the recipe, which I did print out for myself. Great!
