Everyone needs to try this recipe, it was excellent. My husband & I made some cabbage slaw & used the jalapeno mayo in it & added some cilantro, put the fried catfish in a taco shell with the slaw on top it was out of this world. This recipe is a keeper for our family we love it!

This was fantastic! The mayo was a nice touch - also added some hot sauce to kick it up. No leftovers with this dish!

What a fun meal! We hadn't ever tried deep frying because of the smell and mess, but this recipe (and a new cast-iron Dutch oven lured us in. It was terrific. The directions are spot on and the result terrific. The result was a light tasting catfish on a delicious roll. A couple of items. We used only 1 jalapeno for fear of too much spice. We found the mayo very mild and definitely Not spicy. Next time, we'll raise it a little. We did not let the catfish cool and found the result crispy and tastier, we think. Finally, I think the next time a light salting immediately after the catfish comes out of the oil would a nice flavor. The potato roll was a delicious idea and one we may adapt for other sandwiches......lobster?? We served the catfish with cole slaw and roasted sweet potato chunks. All in all, a terrific summer meal.
