    I love this recipe. It is exactly like a dish my mother made and served in her small family restaurat when I was a kid. She actually called it "Hobo Hash". I've made this many times over the years for my children, and for my grandchildren as well.

    Fantastic! I experimented with different sausages and cheeses. My favorite is with chorizo and feta. WOW! I highly recommend the Hobo!

    Just saw this and laughed because I make it all the time and didn't know what it was called. My husband has cholestrol issues so I use turkey ham and 1 1/2 cups Egg Substitute. Everyone loves it and no one can tell its not real ham or eggs!

    We had this at Voula's this morning and it was awesome!! Had them use gooda cheese instead of cheddar. Will make this at home for sure! (One serving is enough for more than one!!

    I loved this! I made some changes (I hate veggies so those were tossed. I used bulk chorizo instead of breakfast sausage and it was awesome. Can't wait to make this again.

    This is a wonderful breakfast dish in its self. Simple and savory, the way breakfast should be. My favorite part about it is its given me so many ideas. I usually add green peppers and substitute cheddar for swiss but I encourage everyone to try it the way it is because it is delicious. Its also FANTASTIC for a crowd...all you need is a bloody mary and you have a great weekend breakfast!

    Very tasty! Found this recipe and made it the next morning and was impressed it was great! Only thing I had to change was leaving out the mushrooms because my fiancé doesn't like mushrooms.
