I can't figure out how something so simple is this tasty but I absolutely adore this recipe. It's super easy and after eating I feel like I've done something healthy for my body, as opposed to weighed down and tired. Since I don't have a grill I usually bake the foil bundle at 450 for 30 minutes and it comes out great.

My hysband has never enjoyed sweet potatoes since he's only had the sweet version that is served during holidays. Made these and they were an instant hit and have been to everyone who's tired them. I used the diced garlic that was store bought and it worked out well. This would be good even served for breakfast with eggs.

I'm sure it's because our grill is hard to moderate in terms of temperature, but we had a terrible time with this recipe. It was a disaster! The potatoes completely scorched on the bottom through the foil. As a result, even the rest of the mixture tasted burned because it had cooked with the smoke inside the foil. We had to toss it all out.
My advice would be to make sure the heat is low, or turn/flip the foil packet to help prevent burning. I think the flavors are terrific and it's worth another try, but keep an eye on it.

I liked these at the BBQ I had. The only thing is I had to nuke them at the end because the double batch I made didn't cook quick enough. I even had people ask for the recipe.

We made this for Memorial Day and it came out perfect. We tripled the recipe, except for the garlic which we only doubled. The leftovers we reheated yesterday in a frying pan and they were fantastic, maybe even better than the first day!

This is such an easy dish and such a home run. You can find sweet potatoes and scallions so cheap that this recipe costs almost nothing to make! Also, I loved the garlic after it was grilled.

I love sweet potatoes and this dish is a unique way to prepare them. I love all the spicy, savor components with the sweetness of the potatoes and cooking them in the foil packets is easy and the texture comes out just the way I like them (very soft but with some parts a little crispy on the outside. Will make this again!

This is very easy recipe, you can put this together for a quick bar-be-que. The carmelized potatoes were great. You can have sweet potatoes without the mess, all you do is throw away the foil. Which is the best and easy clean up. Just like the other person said about better the next day, is right.
