Made these for a family brunch and they were wonderful. Easy to make. Very tasty. Look delightful. I used 1/2 lb cooked/shelled shrimp and added about half the mayo called for along with a little old bay. YUM! The lemon juice gives a nice brightness and the contrast between the cool, creamy shrimp and the crunchy shells is great. Next time I will make double and try my hand at my own shells. Also would make a great shrimp salad sandwhich... if there was any filling left!

The salad is spectacular and very easy to make. I did find it needed a little something extra so I added some garlic powder and more pepper.
The mini phyllo cups are delicious (significantly more so than the pre-made, but they are quite a bit of a pain to make...particularly if you are making a large amount.

I've been making this for years, but with a couple changes. I also add chopped water chestnuts, omitting the celery. I make the cups out of 2-inch rounds cut from refrigerated pie crusts and bake them in mini muffin tins. Garnish with a sprig of fresh dill. This is always a big hit!!!
