    My husband and I love to watch "DDD" and I'm a pretty good home cook.
    So when I promised to make him one of his favorite comfort foods - meatloaf -
    I thought I would check out something new instead of our tried and true
    homemade meatloaf. Hubby loves A1 and worcestershire, plus we like
    Montreal seasoning when grilling steaks, so this recipe looked interesting.
    It may be great when made in the restaurant proportions, but I'm wondering if someone flubbed the amounts when translating to home cook proportions. Since making it the first time, I followed the recipe exactly and thought to myself, 'that is a lot of thyme for 3 1/2 # of meat'. We found it very salty and overwhelmed with thyme. May try it again with way less thyme and Montreal plus substitute some of the beef with pork for juiciness and add minced sweet onion to the mix.

    how could you blame the recipe for being nasty , if you didn't even put ground beef in there. Who substitutes bologna and mrs dash and then bashes the recipe. I think that mess was all you.

    Hi there,
    My name is Jeff and I am a free-lance chef for 17 years. I own BBQ911 here in Santa Rosa and love teaching people new ways to cook tradional dishes and new ones, and of course fresh slow smoked BBQ.

    Ok guys this meatloaf dish is a little should i say it....ZZZZZZZZZZZZZZZZZ boring. Don't get me wrong it makes a pretty tasty meatloaf especially with home made yukon gold mashed potatoes.

    Follow the recipe but sub 1 lb of ground pork butt, add fresh thyme, fennel, red pepper flakes, ground cumin and mustard powder. Add 1/4 cup molasses fresh cracked pepper, and a hit (tbl of apple cider vinegar. When choosing bread crumbs... dont you dare buy store bought crumbs make you own.
    Fresh San Fransisco sourdough sliced and then quartered, add to bowl with garlic powder, fresh chopped parsley, pinch sea salt, parmesan cheese and melted butter and olive oil. Mix well by hand and roast in a hot pan (cast iron preferred on the stove until golden brown. Let sit for 30 mins. on paper towel. and chop by hand and add to meat. Continue the recipe.

    NOTE (The problem with food today....to many darn shortcuts. Pre-processed, pre-packaged, what happened to fresh!

    This meatloaf goes great with as said Yukon gold mashed potatoes and corn off the cob.

    HAVE LEFTOVERS YOU SAY!!!!

    Try this with leftover meatloaf. (MEATLOAF HASH
    Fire roast red, green, yellow bell peppers then peel skin, in a pan soften 2 sweet vidalia onion coarse chooped. Then add these to a food processor with 1 clove of garlic, 2 teaspoons of brown sugar and leftover meatloaf. Coarse process all ingredients and add to bowl with left over mashed potatoes and corn. Incorparate ingredients and cook on stove in skillet (cast iron is my choice for this dish. Serve on plate with eggs on topped with sour cream and fresh chopped green onions.

    I have made this meatloaf recipe many times and it always meets with rave reviews. I substitute a pound of mild Italian sausage for 1 pound of the beef and add some minced onion and minced celery. Other than that, I pretty much stick to the recipe (although, I don't always measure much; I'm a seat-of-the-pants chef except when baking. I serve it with homemade mashed potatoes, gravy and baguettes. Tossed green salad on the side and a little Cabernet. Mmm, Mmm!

    How can you "rate" a recipe that you say you tried to make. When you change most of the main ingredients. That makes it a different recipe. Right??

    This was the nastiest meat loaf I ever ate! I didn't have any chuck, so I substituted baloney. I also ran out of thyme so I used Mrs. Dash. The end result was so bad my dogs wouldn't even eat it! yuk! I would never recommend this recipe to anyone!

    I made the meatloaf last night, and it came out pretty good - considering this was my first time ever attempting to make meatloaf. I agree with other reviewers that the thyme and garlic was quite overpowering. I made a ketchup/brown sugar sauce to go over the meatloaf, and this really helped to tame down the strong taste of thyme and garlic. Overall, I think this is a good recipe to follow.
