My wife and I tried this recipe with the addition of chirizo sausage and thought it was good, but the stuffing is even better with eggs and a warm tortilla for breakfast.

There is a ton of corn and lots of seasoning! I wouldn't char the chiles for 15 minutes tho....too long and they were too soft after all that time.

This recipe is delicious and easy. I really like the chile relleno but the green rice wasnt as good as I expected. Maybe it was my portion of spinach used or the fact the I used brown rice instead of white. Overall it is a very good recipe to eat over and over again

Wow! This recipe satisfied my craving for mexican food without all the guilt I feel when I eat out at my favorite Mexican restaurant. The use of the fresh corn makes this dish spectacular. The corn's sweet and crispy crunch mixed in with the smoky flavors of the rest of the ingredients is out of this world and with just enough cheese to make it feel really indulgent. The rice that goes with this is fresh and bright tasting and complements the stuffed pepper perfectly. I'll definately be making this one again and again and again.

This was really good! But come on! There is absolutely no way you can get this on the table in 30 minutes! Maybe others are more talented and coordinated than I am and can get it done, but not me. However, the meal was definitely worth the trouble. I added garlic, lime zest, and hot sauce to the rice while it steamed, and it was not at all bland once I added the green mixture. I also added black beans and shredded chipotle cheddar cheese to the corn mixture. Delicious!

This was AMAZING! I was a little skeptical, as I do not like super-spicy food. This was wonderful, and it had the right amount of kick!

I did use a can of black beans and some cilantro - gracias to those that gave me that tip.

Thanks Racheal! My hubby and I have a new dinner favorite!

This is a great alternative to a truly rich and fatting favorite!! You hardly miss the batter and fat for all the wonderful fresh flavors. This was a hit with the whole family.
