    Great recipe. I substituted bacon for the pancetta. I would recommend making extra sauce and using it, because the shells tended to be a little dry, but still delicious.

    Fantastic recipe! Only used one lb of spinach instead of two, and I think the ratio definitely worked better. Also followed recommendations of other reviewers and put down a layer of tomato sauce and doubled the cream sauce. Also added some diced Roma tomatoes on top before baking. I think next time we make this recipe, I'll add some diced artichoke hearts to add a little more texture. Thanks Giada!

    My guests had seconds on this dish. But my father had thirds! Everyone loved it because it's different then regular stuffed shells. There is more then just ricotta. The spinach and pancetta makes it very tasty. And the Asiago cream sauce was to die for! After I made the exact amount of cheese sauce, I figured I would make a little extra just in case someone wanted more on top of their shells. Well, the first batch of sauce was followed exactly how the recipe called for. On my second batch, I used Fontinella cheese. It was good. The third batch I used Pecorino Romano. They said the Pecorino was too strong. So if you make this dish, don't substitute the Asiago. It is a must to use this exact cheese as the flavor is incredible! I will be making these stuffed shells more then once!

    Delicious!!! I used bacon instead of pancetta, and increased the amount of sauce!! Rich, warming and wonderful!! I will make this again for certain!!

    Not sure why this recipe is only four stars. This dish tastes amazing! Only thing I changed was that the second time around, I made extra sauce. Doubled the recipe. I reserved some so that I could pour the sauce on top of the shells prior to serving. You can use a little more cream than the recipe called for if you want it a little more saucy. I will be making this dish the rest of my life.

    I did not have access to pancetta so subbed a thick cut bacon. I would definately use just 1 lb of the spinach next time as the 2lbs seemed overwhelming (and I LOVE spinach!.
