I saw the show where Ina featured this sandwhich, I thought wow, if this would taste as good as it looked I would be happy. I was amazed at how tender the steak was, and the carmelized onions and thyme, what more can I say. My tongue was tasting so many things it was just awesome. This was less expensive and tastier than buying steak um's. No more steakum 's for my man.

Ina, you have done it again. Fabulous! The mustard/mayo spread is a great complement to the sandwich. I added swiss the second time I made this and loved it also. Another winner, keep them coming!

I saw this recipe a few times on the TV and thought Ina is butchering a steak sandwich! Being from Philly, I have a set perception of what a steak sandwich is.
I was chagrined at my Philly arrogance when I took my first bite. This is a delicious and simple take on a Philadelphia classic. The mayo sauce and caramelized onions marry well. It's a combination that reminds me of Outback's Blooming Onion.
Some things I might suggest:
use left over steak. You can cut it very thin when it is still cold and spread it out on a plate in a microwave for 45 seconds.
I like the sauce so much that I would recommend tossing the steak and onions in it and use it liberally.
Though I like the mayo sauce very much, I think some horseradish and ketchup would add to its flavor.
I'd like to try this with chicken, seitan or another meat substitute to make it a little healthier.

For my first EVER attempt at cooking red meat, I thought this was a rousing success. Kept the steak on the fire a little too long (was worried about it being too rare but it's medium done-ness did not detract from this delicious recipe. Used only one onion (which was plenty for two sandwiches and concocted my own mix of proportions for the mustard-mayo, but still ended up with two entrees that looked just like Ina's mouth-watering picture. Might put sauce on both sides of the bread next time. Even my uber-picky roommate gave me props for this one. Super easy, super delicious, and a relatively inexpensive way to enjoy steak. "Boy, won't Jeffrey be surprised when he tastes this!"

I actually used a tri-tip instead. My husband bbq' it and we sliced it up.
Instead of her spread we toasted the focaccia rolls with butter and garlic instead.
We loved it!

I just love all of Ina's recipes. This sandwich was so flavorful and delicious. I did not use sour cream in the sauce but I added some horse radish which gave the sandwich a nice kick.
Ina has made be a better cook!
