    I made this as an appetizer for a big family get together. I put them out, and the next thing I knew they were completely gone! So simple and easy for such a great response. I didn't have arugala so substituted spinach instead and made sure to season properly for enough flavor. Worked like a charm.

    I made this on a piece of of nutty bread, and I used mixed spring greens, all from Trader Joe's. They worked. If you're crazy for the smell of goat cheese, the baking process takes away some of that. This is a really good recipe and I'll definitely make it again.

    This is VERY good! I added some proscuitto and used naan instead of tortillas. Everything else was the same. Awesome!

    This was so simple and quick but delicious! It is the perfect fast fix healthy meal. I used spinach instead of arugula because I had it on hand and it worked great. I would high recommend!

    What a great lunch/snack/app! I followed others reviews and added red peppers. I also added some balsamic vinegar to the veggies while they were caramelizing. It brought a sweet taste to it which was great! This will definitely be added to my recipe list. Thanks Ellie!

    SO YUMMY! ive made it for lunch 3 times this week. i make sure theres lots of onions cuz i love onions! and i also use spinach cuz i have it on hand and i add some bell peppers that i saute in with the onions. so good!

    this was VERY good but not very filling. Served it with a salad. The goat cheese made this recipe. I think it would be better as a snack or appetizer. Lover Ellie's recipes. Go with the ratings and you'll find really great recipes

    I used fresh baby spinach since argula was not available at the grocery when I went......EXCELLENT....Be sure to crumble goat cheese in small pieces because it does not spread....Do not overcook or tortilla gets too crispy but still very, very good.....!!!!!.... EASY.....

    This is such a simple recipe, yet it is delicious! All the flavors go so well together. I added bite-sized pieces of chicken for extra protein and it still works since the chicken does not compete with the other flavors.
