I made this dip for a cocktail party recently, and it was a huge hit. I used low-fat ingredients to make it a little more crowd friendly. Everyone loved it and it was super easy to make!!

Overall, a good recipe. I used fresh spinach (conveniently on-hand, reduced fat mayo and substitued the mild, part-skim mozzarella with a baby swiss (again, on-hand. It was very bland. Added about 1/8 cup freshly-grated parmesan cheese and a 1/2 tsp. of red pepper flakes, and grated a bit more parmesan on the top before serving. It was an excellent dip, at that point.

I bought Ellie's book and have been cooking my way from cover to cover. Several of her recipes are new staples in our home and are made on a weekly basis. I was also floored on how smaller my grocery bills have been this past month! The ingredients are usually things that you have on hand.
I have made this dip over and over again, because I cant stop eating it! Then I make it and I have to split it in half and send half of it to work with my husband. I literally make it and know that I will probably finish the pan that day. Filled with so much spinach and artichokes instead of greasy mayo, oil, and cheese. You can taste the spinach and artichokes!!
Thank you Ellie for over and over again creating dishes that are filling yet not filled with bad fat!

I have very little cooking experience but I decided to try out this recipe for a potluck. Overall, it was very simple to make and the ingredients are all easy to find too (I did substitute the suggested cream cheese for a regular cream cheese. My friends all thought it was absolutely delicious and I will for sure be making it again. Some of them even asked for the recipe they liked it so much!

This was my first attempt at a spinach dip and it was a little ambitious considering it was also my first time cutting a fresh artichoke and using fresh spinach straight from my home garden and consequently cutting the recipe to a third (because I didn't have enough of the ingredients or enough people. It was still very good with relatively easy to make! I also used a splash of lemon (which keeps the artichoke fresh anyway, and some Parmesan on top. 4 stars because It still wasn't the best I've ever had and a little over-mixed, but definitely pretty good relative to the difficulty level. Next time I will probably try to mix without using the processor. Thanks so much for a solid recipe with enough room for a little improvisation. My toddler liked it too!

This is a great tasting dip. It's not too heavy or filled with mayonnaise. I've brought this to several potlucks and everyone loves it

This is a very good recipe. While it still has some fat in it, tasteless w/o it, it has ALOT less than the traditional recipe. Thanks Ellie for another great lower fat recipe!

I made this for my relatives this past weekend & they loved it. My husband commented that he liked how he didn't feel gross after eating this version compared to regular spinach & artichoke dip. I used a 14 oz. can of artichokes & I used fresh buffalo mozzarella.

I am so glad to find a healthier version of spinach artichoke dip. This was very good and not hard to make. I am tucking this away for my next party!
