So easy to make. My son-in-law said it was the best pasta salad he'd ever had. I made it a day ahead, and it just kept getting better the more time went by. Use a grapefruit spoon to get all the pepper skin off really easily.
We will definitely be making this over and over.

This recipe was delicious and a very easy and quick preparation. I used bottled roasted red bell peppers which made the prep even faster. Great menu for a crowd as the recipe can easily be multiplied.
