This was tasty. I think the next time, though, I will add even more cilantro and lime zest. It needed just a little more flavor for me. However, it got my ten year old son to eat rice any way other than plain. (That's a big plus for my husband and I, that like flavor in our rice.

One of my favorites! My step mom makes this all the time for me when I visit. She always uses left over Basamati rice and adds a little extra cilantro and cheese. Absolutely delish!!!!

Amazing idea! I love rice and this dish created such great flavor and texture in minutes to a normal rice dish! Accompanied with her other dish, tinga polblana (mexican pulled pork, the two worked perfect side by side! GREAT JOB! p.s. i miss you on food network :(

I prepared the dish exactly as the recipe says. End result - hard rice with a bit of flavor. On the plus side it only took 5 mins to prepare so I'll give it another go.

I used 3 cups of leftover rice and 1/2 cup (at least chopped cilantro. I added 3 tbsp butter and liberal amounts of salt and pepper, used lemon instead of lime zest. Microwaved for about 5 minutes, stirred in 1/2 cup parmesan cheese and baked in the oven at 400 for about 15 minutes, then turned on the broiler for about 5 minutes. Before serving I drizzled with a little extra virgin olive oil. Why other reviewers have such a problem with this recipe is beyond me. My whole family absolutely loved it (with broiled tilapia and sauteed broccoli - we have leftovers and will definitely be eating it again. I don't care who made it or what they wear or it they are from Mars - it is one of the best leftover rice dishes I have ever had and I will definitely be making it again. Even thought I have been happily married for 12 years, if I had a date tomorrow night, I would make it. Thank you Ingrid - you go girl!

It is funny how all the "haters" go under the name anonymous....whatever people. This was very tasty and a good way to make boring white rice interesting. I like Ingrid..keep up the delicious work chica!

Seriously, who cares what she is wearing.

I found this recipe to be surprisingly good. The lime and cilantro give this rice a wonderful flavor. My husband likes it so much, he will just eat it as a main course.

This is an easy, quick and clever way to rejuvinate the leftover rice!

Also, i would like to say im very disappointed in those who are immature enough to post such mean and hateful comments, this woman is kind enough to devote her time to create ideas and recipes for the viewers such as us

I made this rice dish along with the others listed with it, even though so many of the reviews were negative. It seemed most people were reviewing the host not the recipe. I found this dish to be a nice change from plain rice. I often make it when we have leftover rice from Chinese take out, it is very good.
