    The sweetness from the squash and tomatoes really complement each other. I enjoyed this quick healthy dish using much of the seasonal vegetables that I already had in the fridge. I took others advice and left out the potato. Next time, ill take the dish out sooner (oops, veggies became mushy and omit the eggplant to please my hubby.

    This was yummy. Hubby and I enjoyed it. We ate it as a meal, but it might have been better with sausage or meatballs or something added in as well. Or just the bread as it mentions. We didn't have any, unfortunately.

    But it was tasty and fills you up really fast.

    We used Whole Wheat German toast instead but kept everything else the same and it was DELICIOUS. Will be making again!

    I made it without onions and potatoes because I didn't have either at the time. It turned out great. I fed it to my boyfriend and my guy roommate for dinner (neither of who are vegetarians. They both said they loved it and that it was very filling! I did a layer of eggplant on the bottom of the pan over the canned tomatoes to help to add some extra substance. I think the dish would have been even better if when I served it I served it with a side of sauce.

    My husband made this for us on Memorial weekend! Awesome! Awesome! It was so tasty, we actually served it with a nitrite-free Italian sausage and sourdough bread. It was wonderful! I didn't care much for the potatoes so we're making it with no potatoes this time. Thanks Giada for all your great recipes!

    Absolutely DELICIOUS !!!!!!!!!!!!!!! If you love roasted vegetables you will love this dish !! So easy to prepare but so flavorful and it tastes like you spent all day making it! I didn't add the potatoes ,to save on calories . The only tomatoes I used were the diced canned tomatoes at the bottom. I eat this dish as a main meal since it is so filling and is even a perfect lunch along side a piece of light bread. This Greek Caponata is so healthy too. Thanks Giada for another winner !!
