THE BEST Lentil soup recipe ever. So much flavor and texture. Love the presoak technique to soften the lentils. Will be storing leftovers in freezer for future meals... Love ya Ina

This soup was delicious!
Though I'm sure it's just as good by following the recipe, I made the following modifications:
Beef Stock instead of Chick Stock, reduced to 2 1/2 quarts instead of 3 (it's what I had on hand
Beluga/black lentils instead of green (they are a bit more firm
Gruyere instead of Parmesan (thought it went better w/the beef stock and thyme flavors
I will definitely make it again!

I followed this recipe verbatim & it was absolutely amazing. This was also the first time I've cooked with leeks. Don't let the size of them scare you away! The flavor of this soup is restaurant quality for sure! Enjoy!

I make this every year on Labor Day weekend, and freeze it in individual containers. This way, when I get sick throughout the year I have delicious homemade soup in a matter of minutes. Thanks again Ina!

I was watching Ina on T.V as I do every day & she was making the soup..I couldn't get all the ingredients written down quickly enough, so went to food network. I had 6 people for dinner & every one of them asked me for the recipe! I thought it was amazing & not at all difficult to make.

This soup was delicious. I only had red lentils, so I used those instead of the french lentils. I also added a zucchini. This was easy to make and even after halving the recipe there was enough for three meals for my family of 3. I froze the leftovers and they were just as good the second time around!

Another excellent recipe from Ina. The same recipe is listed with the addition of kielbasa sausage on this site if you like to add some meat. I added some dried chili pepper to give the soup a little bite - only about 1/2 tsp. I also used vegetable broth for my vegan daughter and it came out very well that way too.
