For a weeknight meal, these came out great, the salsa was good but I think using enchilada sauce next time would be even better. I added some chopped white onoin to my filling and they were delicious. This is a great basic enchilada recipe that you could easily change to get your favorite flavors.

this recipe was bland and boring and not very traditional. a jar of salsa? how about making some enchilada sauce, also i don't remember having beans in my enchiladas, but to each their own. TF has a better recipe for enchiladas as far as i'm concerned.

I love this recipe. It's very easy to make and delicious as well. I make it with a salsa verde instead of red salsa and sometimes opt to leave out the black beans. Simple but wonderful.
