    This frittata turned out great! The original recipe needs something extra, and could really use a couple of changes to bring a new level of richness to it. I browned the potatoes a bit more than the suggested time, making for a perfectly done crunch in the final product.

    Instead of adding just milk (or cream or half-and-half, I split the suggested dairy: 1/4 cup milk, 1/4 cup ricotta cheese, 1 Tbs. cream cheese. What a creamy richness (and fluffiness! this added! Would definitely do that again.

    Great ideas to add more veggies! Anything you add will definitely pop against this backdrop. Really great.

    I made this recipe with a few changes to reduce the fat, cholesterol and calories, and it still tasted great. I love Rachel, but sometimes her recipes aren't as "figure friendly" as she thinks ;- I reduced the number of eggs to 8, and added 3 egg whites to keep the balance. I reduced the amount of oil to about 1/8 cup and used cooking spray in conjunction. I also reduced the cheese a teensy bit, and you couldn't even notice the flavor difference. Use baby red potatoes. If you are on Weight Watchers, this original recipe is 12pts/serving, but if you make those changes, it reduces the points value to 9. Very tasty, and really does work for breakfast, lunch or dinner.

    I thought this was awesome and so did my family and guests! So easy, so tasty. Halved the recipe, but even hubby could see that keeping it as is and adding the full amount of eggs some sausage and lots of other things could just be THE BEST for breakfast, brunch, lunch, snack or dinner. Served for dinner with great gilled chicken and steamed broccoli. I was wishing there were left overs after company just left! I'll make again for breakfast tomorrow! Thanks Rach and thanks to your Mom!

    This recpie was great! I added sausage and cheese to mine.. This will be a great go to recipe for me.. You can add soo much, Ham, veggies etc..

    I made this last night and what a hit! It's a fairly simple recipe really, but the flavors work together perfectly. I used dried rosemary and it tasted fabulous. Next time I may experiment and add some pancetta. This is definitely one to make again!

    Super tasty! We used fresh rosemary from the garden & added a just picked banana pepper for extra zip. Lot's of possibilities with this easy & delish base!

    I made this last night and my husband and I absolutely lloved it! Full of wonderful flavor and sooo easy! Truly a 30 minute meal!! I will definitely be holding on to this one!

    I made this for dinner tonight and I absolutely loved it! It has great flavor, I just LOVE pairing rosemary & potatoes. I will definitely be making this again, even for an entertaining breakfast/brunch meal.
