I made these the other night and the flavor of the potatoes and bacon is just delicious. I only used bacon because that is what I had, but they were still yummy! And like the previous reply said, it doesn't specify in the recipe that you are to cook the potatoes in the bacon and pancetta grease, but you must!!! That is the key to getting the wonderful flavor!! The only trouble I had was getting the potatoes crispy and "golden brown" and Giada said. I ended up throwing them in the oven for a few minutes, but that didn't really help. I think my problem was that I had too many potatoes in my skillet. I made them for some guests and they absolutely loved them. I used rosemary instead of thyme (again, because that is what I had and the rosemary was wonderful. Thanks Giada for another great dish!

Loved the recipe! But I did find it funny that on the show they removed the bacon from the pan to drain the fat on paper towels, and then cooked the potatoes in the left over fat in the pan.
