This soup is DIVINE! Also, easy with basic ingredients. We used garden fresh tomatoes and were really pleased with the results. This soup and a baguette make a wonderful dinner. Where are those leftovers?

Ina has another incredible favorite among my family. Yesterday, I found my self with too many tomatoes from the garden and looked for a recipe to use them up. This recipe was whipped up in no time and the flavor was incredible.
Two changes... I don't have a food mill so I just peeled and cored the tomatoes before adding to the soup. I substituted water for chicken stock.
I can not recommend this recipe enough....

Fantastic! I didn't have a food mill, so I used an immersion blender and it turned out creamy and smooth. I used local everything--- cream, carrots, onions and tomatoes--- it was delicious and easy. A good way to use a lot of tomatoes at once.

Easy recipe to prepare. Exceptional flavor. I added additional Italian spices and a blend of wonderful shredded parmesan and romano cheese. I made homemade Italian seasoned focaccia bread and served it with the soup. Thanks Ina for a wonderful addition to my keeper recipes!

Simply delicious. What a great flavor, and it was no hassle to make at all. At the end, I did not use a food mill, but rather a stainless wire strainer and a spatula... just pushed the soup through. This was the best part... instead of tossing the dry pulp left over, I threw it in my food processor and pureed it. I added some pecorino romano cheese and now I plan on using it with pasta, or served with crostini or grilled pita as a dip. It's delicious, and cost effective (for those who enjoy not wasting a single ounce of prepared food!. Big fan of Ina's craft in the kitchen... her recipes are simply a joy to prepare and to eat! :-

This is AMAZING soup! It has the texture of velvet. I made it exactly like the recipe but I used Vidalia onions instead of red because that is what I had on hand. My husband loved it too!
