blanch the asparagus first before roasting. Blanching is boiling for a few seconds in a large pot...then plunge asparagus in ice water bowl. this will help cut down the roasting time (10 minutes for raw asparagus??? and make a better carmelization on the end result. Blanching gives the asparugus a nice green color that maintains during the roasting process!

I love watching Melissa! I was torn about who I wanted to win the finale, but since I've seen her last couple of shows, I'm confident the right chef won! She cooks for me and my family's needs. I don't have much time, and we're always on a budget. She teaches me something new in every episode, and I can't wait to make everything she's demo'd so far! Tonight it's the asparagus with the lemon-thyme orzo! Thanks, Melissa!

This was a wonderful complement to the salmon cakes that I also made. I was unsure of how I might enjoy a vegetable I've never really enjoyed, but the viniagrette had a great lemon taste. What an easy recipe too. Thanks, Melissa! I look forward to next week!

My wife and I love Asparagus but have always had a problem making it really good. I LOVE the way Melissa explained how to do this. It is very simple and even a GUY like me can figure it out. My wife and I really enjoy watching the show. Simple ideas for the every day folks. Keep up the great work!! Finally an everyday mom speaking to the everyday person.

This sounds really good and easy (which is my first requirement!. When I'm being lazy, which is often (LOL!, I steam my asparagus and add a little salt. This is simple and quick enough to do on one of those nights after work when I'm not up to a lot of effort in the kitchen, while also adding another level of flavor to one of my favorite things to eat. Got some asparagus in the fridge - will be giving this one a try right away. :
