I only made the Spinach Salad, but it was great! Super easy to make and I could just eat a bowl of it by itself. The first time I made it I let the vegetables cook for a longer time and I think that made it even better. A great side dish to anything

Kitty Stallings seems so genuinely nice, and her weight loss is inspiring. I did a search on her name and found her site http://www.kittystallings.com/home/ where she has other recipes posted.

I just made this for my Husband (who was just diagnosed with Diabetes and my two daughters (8 & 5 yrs old and they absolutely loved it!!! I added much more hot sauce since we like it hot & spicy. The vegetables were amazing. This recipe is easy to follow, prepare and cook. Thanks for providing a quick and healthy meal for families wanting quality dinner time without all of the long preparation!

Marinades that contain acidic components like vinegars, citrus juices, etc will start "cooking" Shrimp, Scallops, or any kinds of Seafood after a short period of time. Never marinate those items longer than 15-30 minutes.

Thanks, Marian, for posting the Salad ingredients. It drives me nutz that they always seem to omit the one recipe that I want to try most on this show!

A couple of really easy ways to prepare grilled Shrimp:

1] Marinate in Margarita Mix (with or without Vodka. Grill. Serve with Lime wedges.

2] Marinate in a prepared Shrimp Cocktail Sauce. Grill. Serve with Lemon Wedges. BBQ-Sauce is another alternative.

Can you tell that I luvvvvvvvvvvvvv Shrimp! (grilled, sauteed, baked! lolll

I tried the Grilled Creole Shrimp with the salad Bobby made (but that recipe isn't on the website. It was a great pairing. The salad consisted of tomatoes, avocado, torn basil leaves, thinly slided red onions, cotijo cheese and toasted pine nuts tossed in basil oil. This would be a great recipe to make after coming home from work as long as you started the shrimp marinating either the night before or before leaving in the morning. You could have dinner on the table in a matter of minuntes.
