I made the following changes: I doubled the brown sugar, added walnuts and sesame seeds and powdered cloves. Simple and tasty!!

I love that this recipe uses ingredients that I use frequently and always have on hand. My kids are allergic to dairy, so I substituted the milk with soy milk. I did not use soy flour because of that. I also used coconut oil instead of olive oil. I substituted black strap molasses for some of the sugar. I'm always looking for new ways to use veggies and fruit, and this recipe will find its way into my "keeper" file. Thanks for the great ideas for feeding kids healthy, normal food Melissa!

Missy Chase Lapine wrote a book about sneaking vegetable puree into kids' food in 2004. It is called the Sneaky Chef. So, Jessica Seinfeld, who wrote her book in 2007, is the one that stole the idea from The Sneaky Chef

More like a muffin than a cupcake, but still very good. Moist and fruity and a perfect afternoon pick-me-up with a cup of tea. I also want to comment on other tips I've received from Melissa's show - Freezing your ginger root and grating as needed, super! 4 step chicken - fast and delicious with so many options; technique for segmenting oranges sections is wonderfully easy and I now use it often for salads and desserts. Thanks so much, Melissa.

delicious & nutritional homemade muffin. It does not matter where the recipe

Everyone that has a show ar writes a "Healthy Cookbook" has a recipe simular in one way or another. This recipe is Melissa"s, not copied. Even stor bought ravioli"s have veggies in them. Great job Melissa, I love your show and recipes.

I love these muffins! I am a poor college student and I had most of these ingredients on hand. It's not like you can't use these ingredients in other recipes also, making it budget friendly. If people would stop complaining and learn to eat foods like this, maybe this country wouldn't be so overweight. I also don't like when folks come on here and give bad ratings when they never made the recipe, makes no sense.

I'm not sure why the poor reviews. My two year old ate about 4 of these today spinach and all. Ofcourse that is what he is used to eating. The did change a few things, first I used a 1/2 of a cup of sugar instead of 1/4 cup for 24 muffins and I also used more carrots and spinach. I did not use all purpose flour or soy flour but extra whole wheat. Also, I used about a 1/2 cup low fat yogurt and 1/2 skim milk and 2 eggs instead of one, to up the moisture. I used a combination of dried blueberries, cranberries and cherries. I had everything in my pantry. I put the spinach in the food processor and chopped it up fine and grated the carrot. I ate some as well and though that they were very good. The second batch are in the oven right now. :

Just read the reviews for Magic Fruit and Veggie Cupcakes. It is hard to believe that mature adults would send their energy and time baking something that has an ingredient list as long as this one and then live to complain about how horrible they are. Simple advice for you would be to realistically look at the list of ingredients - then look again - and see that the items are something that you are very unfamiliar with and choose not to make the recipe. If you want to try something different, choose something that has at least a few familiar ingredients or be creative and modify your favorite muffin/cupcake recipe.
Also, why slander the messenger when you chose the recipe? You went to the store and purchased the items. You preheated the oven. You measured and mixed the complicated list of ingredients? Who's to blame?

Crazy to see all the extremes reviews. I made these and they came out wonderful. I used only fresh fruit (Apple and pineapple. I also followed the recipe exactly and was very please with the outcome. I would make these again.
I rooted for Melissa when she was on the "Next Food Network Star" show and I'm happy with her recipes. I have already tried a couple of them.
My only issue - is that I could call these Magic Muffins instead of cupcakes.
Keep up the good work Melissa!
