    This is a great recipe. It is very healthy and quite enjoyable. I did not feel like I was eating vegetables and oatmeal. However, I would not consider them cupcakes. As for the comments below from people complaining about the special ingredients required for this recipe, buying flaxseed and wheat germ ect. is really a good idea. You can make tons of healthy and delicious recipes from these other ingredients.

    This is a great recipe. Next time I would add a little bit more olive oil because mine came out a little dry.

    These are so delicous and I love making them! I pretty much always end up throwing everything in them...each time I make them I mix up the fruits (pineapple is great and nuts. O and the zucchini adds the perfect amount of moisture! And props on using the ground flax seed (great way to pump up the fiber

    I wouldn't even waste my time trying to make this. Who keeps soy flour, flax seeds and wheat germ in their pantry? This is why most of her meals cannot be made for less than $10. Most of her recipes require things you have to go out and buy, and not only does that add up, but they are items you'll probably never use again.

    I'm always looking for recipes to sneak in veggies for my 3 year old and this one is a keeper! Since I do regularly bake healthy alternatives to traditional baked goods, I had these ingredients in my pantry. Although I didn't have soy flour and just substituted vanilla soy protein mix that I had on hand. I used grated fresh apple since I read that some complained of dryness because it has kept other muffins moist that I've made in the past. Like some of the other comments, I was disappointed to see another low cost show on the channel, although I have watched Melissa and enjoyed it so far. I would love to see her do more of these recipes that are healthy and appeal to little ones -- particularly the picky kind like my son! Also, I feel these healthy recipes are missing on the Food Network without any new episodes of Ellie's Healthy Appetite show.

    Seems klike way too much trouble to go to for muffins. Who has soy flour and ground flaz seeds around? I thought this would be something that I could fix for my son who is diabetic. I like most of the things that you fix but this is not going to be something that i would try.

    I've been searching for recipes for my 3.5 year old picky eater so he'll get some decent exposure to fruits and veggies... I thought this one would be a winner but it was a thumbs-down by him. I love them and the fact that they don't taste all rubbery like most "healthy" baked items is great (2 WeightWatchers points for a large sized muffin ain't too shabby either. My 1.5 year old woofed them down (but she's not as picky as my 3.5 year old. My husband had no comment... probably because he, too is a picky eater and is not a fan of carrot cake.

    At first I wasn't sure about the ingredients. Then I realized that other than soy flour I had the rest on hand......especially since the veggies and fruit can be anything I have available. If all I have handy one day is carrots and raisens that's what goes in. So sometimes they'll have a little less variety but they'll still be just as tasty and healthy.
    Besides the ground flax seed I added whole seeds - each have separate health benefits and it's great to be able to incorporate the whole seeds where I can.
    I'm enjoying Melissa's show and now have my DVR set to tape it every week. Hopefully once she proves herself to the powers that be she'll be able to branch out and expand her show format. The $10 dinner is interesting but more leeway with more of the little tips we heard during the Food Network Star would be great.
