Loved the subtle flavors. Served this with Guy's Bacon wrapped Chipotle BBQ shrimp. Great combo. After sauteing rice and onion, put it all in my rice cooker with broth, cooked perfectly. Dynamite!

This was a nice change from the typical Spanish rice you get at most Mexican restaurants. The flavor of the lime really popped and added a brightness to the rice. I put the chile and parsley in whole and removed them after cooking. It gave the rice a lot of flavor, but did not impart any heat (my kids ate it and enjoyed it. I served this rice with the Crispy Fried Tacos and Salsa Verde. It really is a side dish that can't be beat! I was able to get the kids to eat it because it looked like plain rice, but the flavor was amazing! Thanks Patricia for this amazing recipe!
