    After reading reviews, I cut the sugar down to 1 1/2 cups, particularly since I could only find cream of coconut (which included sugar, as well. I also mixed the coconut into the batter, instead of drizzling over the top. I might try it again with 2 cups of sugar, and use lemon juice for the glaze instead of pineapple juice. The cake was good, but not as moist as many of the reviews cited. I may have to play with this recipe a little more before adding it to my list of favorites.

    I made this for my boyfriend and his best friend. It was so good my boyfriend asked me to marry him, because he wants to make sure he can keep on having this cake! I added an extra teaspoon of coconut extract. I baked it for 50 minutes. This cake DEFINITELY cooks faster than what is indicated. AND, I toasted the coconut. It made a wonderful presentation. This cake is a WINNER hands down!

    I made this cake - twice. I thought I must have done something wrong the first time so I baked it again. Followed the directions exactly - it was dense and greasy. A box yellow cake with coconut flavoring would have been better.

    I have made this cake twice and it has been a huge hit with my friends and family. So much so, I am getting requests to make this cake again and again.
    I made a slight variation to the recipe and it turned out great!
    Keep on with the wonderful recipes!

    The 1st time I made it I didn't have any coconut extra so I added extra vanilla extract. The 2nd time, I made this the cake exactly by the recipe, I decided to change the pineapple juice to lemon juice for the glaze, it was awesome! The Neelys have come through again with another great recipe!

    This cake was awesome! The only reason why I didn't give it five stars is because I made adjustments to the recipe. I left off the pineapple glaze because I thought it was sweet enough without a glaze and I also added the shredded coconut into the cake batter itself. The result was a delicious, incredibly moist, coconut cake--and it was a true crowd pleaser! This is one cake recipe that I will make often!

    I am not even a cocnut fan and i tried this and it was AMAZING!! We shared some with the neighbors and they all loved it, too! I used light cocnut milk because it has less fat and calories and half splenda as well but it was still SUPER yummy! It was one of the most moist cakes i've ever made :

    I saw this cake on the show and I had to try it. It turned out WONDERFUL!!!! It was moist and savory!!!! I will continue to bake this FOREVER!!!
