Exactly what I was hoping for! Peach cobbler in a muffin. I was nervous about making them after reading all of the reviews and they're for a group of 35 so I doubled the recipe. I did listen to some of the advice from the other bakers since at the bottom of the recipe it does say that it had "been scaled down" and "it hasn't been tested..." I reduced the recipe by a half of stick of butter (in my case a whole since I doubled it, I doubled the sugar and added some cinnamon. I only had all-purpose flour so I added 1/2 teaspoon of baking soda and 1 tbsp of baking powder (I wasn't sure if I had to do that but maybe it helped? Some of the reviews said the muffins dropped and mine did not, they're nice and fluffy. I added the syrup from the peaches too (I bought diced peaches in heavy syrup! Then I sprinkled (with a heavy hand a light brown sugar and cinnamon mix to top them and baked for 25 minutes in the regular sized muffin pans. Delicious!

My husband and 3 children love this recipe. It is so easy to make that my 5 and 7 yr old help me make it for their daddy. This is a fun recipe to make and a yummy recipe to eat:

My granddaughter and I made these on evening and they were awful. We had to throw them out. Very disappointing. They had no taste and were thick and would not get done.

Made these for breakfast this morning, added candied pecans to the top just befor going into the oven. This added just enough sweetness, so yummmmmmmmmy!

Tastes like a biscuit with peaches added to it.

I made these last night and they turned out great, they are similar to a peach cobbler type flavor!!! I don't know why people are having difficulty with them. I followed the recipe except I doubled the sugar to a 1/2 cup and I added a 1/4 cup of the syrup the peaches came in. These changes helped add a little more sweetness and more peach flavor. As for the deflating, make sure you don't open the oven during cooking and don't move the pan around alot after cooking. Try to only stick a toothpick into one or two to test when done, this can cause deflation as well. Carefully remove from oven and set the pan on trivets on the counter for 10 mins and do not move them until time up. This should keep them puffed up.

I read the reviews before making this because I really like the idea of peach muffins. I kept reading the word bland which I interpret as a lack of salt. I made these and substituted one of the sticks of butter with Salted butter instead, or you can just add 1/4 teaspoon of salt to the batter. They were wonderful. I also used room temperature butter which makes baked goods less dense than melted butter.

I can see how a lot of people think this recipe is bland. As is, it may be. I think this one is open to interpretation. I added a bunch of cinnamon and some freshly grated ginger root and they tasted great. They were moist and thats how I like my muffins. If you don't want to use all that butter just sub some with applesauce. I used some of the peach syrup (I used peaches I canned myself last year and it was fine. I also sprinkled the tops with brown sugar before baking. Yum yum yum!
