    Best red beans I've ever tasted! I doubled the recipe and used a ham bone left from Easter. Omitted the cayenne. I have NEVER tasted red beans so full of flavor.

    You brought game with this recipe Big Daddy!!! I also followed the recipe exactly with the exception of reducing the salt to 1/4 teaspoon. May try omitting the salt all together next time (and there will be a next time! just to see, but it was perfect with a 1/4 teaspoon. Thank you so much for this recipe. This is a lifetime keeper!!!

    I followed this recipe to the letter and it does have great flavor, though I think there are a couple of typos. For instance, 1 tblspn of salt is too much for 8 oz of beans. If you use 1 tblspn of salt then you should probably use 16 oz of red beans. Definitely use less salt if you are using less than 16 oz of red beans. As it is if you don't make the change then the dish is borderline salty. I still enjoyed it, but next time I make it I'll double the beans and use one whole bell pepper instead of half.

    I used adzuki beans and added a few seeded jalapenos. Next time I'll leave in the seeds so it will be spicier. It was so good we didn't even add the sausage.

    I'm making this for Father's Day-this Sunday and I need to know if I just make some white rice and pour the stock and beans over it once it's done? It didn't make much mention of the rice. Any help would be appreciated.

    Aaron--this was wonderful. Very flavorful. My family had seconds. I agree with other viewers, no salt is needed. This is a keeper. We are trying your Jamaican beef patties on Saturday.

    I've made this dish several times with several substitutions. Turkey instead of ham for those who don't eat pork. Canola oil instead of grapeseed oil. Canned beans instead of bagged beans. No matter how i make it, it's still great. This is the best recipe on this site!

    I NEVER give ratings for food, but I just HAD TO give Big Daddy his props for these WONDERFUL beans recipe.

    I have three young children, work full time, and am finishing my Bachelor's at night so I just threw all of the ingredients (minus the salt in a crock pot and let it cook overnight on low.

    I woke up the next morning and all I can say is OMG!
