    This recipe gave me back my mojo for cooking.....I was in a rut and just wanted something different, and this was it. My beans were not salty, I soaked them overnight, cooked a 16oz bag, gave it an extra 40 minutes and doubled up on mostly all the ingredients and they were perfect Every day they got better. My one year old told me hmmm, goo which means good....and I've been passing around the recipe. Great job...

    I loved all the flavors other than the super saltiness. What made it so salty? I would have to guess one or both of the stocks. Maybe it was the ham hock Oh well. I liked it overall. The rice muted the salt enough to enjoy it.

    Love the recipe! I used smoke turkey instead of the hamhocks and I did not add the extra salt it came out perfect. My family love them it was a hit.

    I really thought other reviewers were being babies about the amount of salt in this recipe, but it really is too salty. I like salt: i salt my food before i taste it and i usually add more salt than a recipe calls for. This recipe, however, needs NO additional salt; in fact, i think it has too much in it. I agree with an earlier reviewer: I'd avoid adding the tablespoon of salt in the beginning. the ham hock probably provides enough salt to be good. Also, I had to add more simmer time since the beans were not soft enough after the 2.5 hours. Overall, aside from the saltiness, it was muy bueno!!! Keep up the good work, BIG DADDY!!!

    This is the first recipe I tried from the show, and it turned out great. I loved that I could throw everything in a pot and forget about it. I can't resist doctoring recipes to suit my taste so I made a few tweaks:

    * I don't like hamhocks so I used a smoked turkey neck instead. The meat was tender and fell off the bone.

    * The liquid was too soupy so I added a 1 1/2 tbsp of cornstarch dissolved in 1/4 cup of water, which made it more gravy like.

    As much as I loved the dish I'm only giving it 4 stars because of how much salt is called for. It's only because I know that smoked meats are pretty salty on their own I left out the salt completely and just added the cayenne and black pepper, which made the dish perfectly seasoned. Less experienced cooks who follow the recipe to the letter may end up finding the beans and rice too salty to eat. Also, I needed an extra hour of cooking time for the beans to get tender but that was no big deal. In all I recommend this recipe and plan on making it a staple in my freezer.

    Like previous reviewers I grew up with the notion of soaking the beans. Not soaking did cause it to take a little longer which was fine with me. I did add a little more cayenne pepper since I like spicy. A tablespoon of salt was way to much given the chicken and beef broth and hamhock. Next time I will cut back on the salt. Otherwise, things beans were delicious. It was easy to cook. I would most definitely be cooking these beans again

    I like most of Big Daddy's recipes, but this one should have cautioned the cook that ham hocks can be very salty. I don't normally cook beans from scratch, so when my husband said he wanted this recipe I copied it and gave it to him. One tablespoon is a lot of salt, never mind with a ham hock.

    I cooked this last Sunday for dinner along with fried chicken wings, okra mix, homemade cornbeard and my meal turned out amazing.....I did not add any salt because the hamhock, stock and smoked sausage....as the meal was cooking my house was filled with most amazing smell ever....I love all of your recipe especially the Turkey Club!!!!

    My mom was from Louisiana, she was a very good cook and she taught me how to cook. But Big Daddy took the art of cooking beans to a new level for me. I tried the recipe and the only thing I added was a chopped jalapeno pepper and I did not add salt because of the broth. My family enjoyed every mouthful of the red beans, sausage and rice. Big Daddy, you are my hero!
