i had a sense that this was going to end up being too thin, but didn't follow my intuition! that being said, some folks like their soup thick while others like it on the thin side. one way around this would be to transfer the pureed squash to a different pot, then slowly add the reserved broth until you reach your desired consistency.
i did add a dollop of yogurt which did wonders for both consistency and taste...

I bought a butternut squash a few days ago not really knowing what to do with it. Since I've always wanted to try one, I figured I would go ahead and get it anyway especially since it's loaded with healthy nutrients. Well..I tried this recipe and it did not dissapoint at all. The flavor was really clean and simple and it was very easy to make. I give it an A.

I liked this recipe very much. Tasty and healthier than others I've made with cream. This has a nice clean but comforting feel to it. I used a bag of frozen butternut squash that was already cubed so that saved a lot of prep time~ and I also added a carrot too! Oh and I only used 5 cups of stock instead of 6 and it had just the right consistency.

This was very tasty. Super easy. Never knew soup this easy could taste this good. Reduced liquid by a little due to reviews. Loved it. Will definitely make this again soon.

Not a fan. tried using sour cream, reduced the amount of chicken stock as others suggested and used a splash of wine for flavor. No one really enjoyed it.

I like the recipe but I used four cups of broth because of reading other reviews of the soup being too runny except I would actual go down to only 3 cups of broth. I added nutmeg, cinnamon and some greek yogurt. The greek yogurt made the soup a little thicker and added some good taste to the soup. Still healthy.

Really tasty start but is WAY to watery. I like it thicker so with the 6 cups of stock a 3 1/4 pound butternut squash produces about the right consistency.
Or if you get a larger or smaller squash you need enough liquid to just cover the squash.
I also pureed everything, including the onions.
I have gotten RAVE reviews for this soup and have been asked for the recipe over and over again!!!
