I have made this dish at least a dozen times. It is perfect for a quick dinner when I get home from work late. I sometimes use regular ham if I have some left over, and it tastes just as good.

I LOVE this recipe! The cheese was good, but rather expensive for my budget, so next time I'll probably use a different cheese, but that was the only hiccup in this dish. It's delicious, and a really nice variety of textures. I will make this again and again, and probably add a few things here and there during different fresh veggie seasons. This is a winner -- as is Brian! Keep this show going! I've followed his skating for years (Brian, you're great on the ice! and this show is what brought me to Food Network, where I will follow his cooking career (and benefit from his creative recipes for years, too.

I made this recipe for brunch and it was a crowd pleasure. I used regular ham with some cooked bacon and the result was fine. Also, we had a lactose intolerant person among us, so I used a soy-based cheese substitute.
This was my first attempt at the Spanish Tortilla. I would not hesitate to make it again.

Hi Brian,
You are doing a GREAT job. I am a figure skating coach, but my sons are short track speedskaters. After early morning practices (you know what they are my boys are starving and want something hot to eat. This recipe allows me to change up the flavors by swapping out the proteins, cheeses, veggies and still use the versatile potato WITHOUT making them wait for 1/2 hour! I used spicy capicola and sundried tomatoes in oil ,with parm. cheese and fresh basil. Use what you've got on hand, this recipe is a WINNER!

I made this for brunch and everyone was very impressed. I used proscutto instead of the Spanish ham and it was delicious
