    This is a good recipe. I grated the onion and it added a better taste than just chopping the onion.

    Not too bad considering it was not fried. A few tweaks - reduced onion to 1/4 cup - added 1/4 cup of corn kernels chopped roughly. Added 1 tsp of honey for additional sweetness.

    Baked Hushpuppies are Better than Fried.Allergies to Restaurant "frying oil"has kept these Delicious Morsels out of My World for a long Time.This Recipe completely satisfies the "hankering" for a good ol' fashioned Hush Puppy not filled with Grease.Tender "Crumb",a True Corn Flavour.A bit of Honey,the Perfect"stand~in" for a Fried "Pup" in a Meal.Any shape Baked does well on a sheet pan.Good Book of other recipes too!

    Really tasty and super easy. I did make some tweaks -- took the suggestion to use crumbled feta, but only used 2 oz. I also only did 1/4 cup of minced onions, as well as just a touch of less salt. I also only had white corn meal, but it still turned out a good color. I think I could even forgo the feta next time. Also, I did not have a mini muffin pan, so I was only able to make 8 regular sized muffins. I filled the remaining four muffin tin cups with water to prevent burning up the pan. That's a home ec trick from eons ago!

    These were kind of bland but I did like it. If you want a non-sugary snack, this is what you should make. Maybe jam would taste good on this.

    After reading the reviews, for flavor I added 1-1/2 large jalapenos, diced + 4 ou. crumbled goal cheese to the batter. Served them as h'or deuvres with jalapeno jelly for a party to celebrate the 40th anniversary of Butch Cassidy & The Sundance Kid. Also, the recipe recommends baking for 10 min; I baked them for 7'ish and they turned out moist.
