I really liked the way the stuffing turned out. I was worried it would be too moist when I put it in the oven but it wasn't at all! I made some small changes to mine; I used baby bella mushrooms instead of shiitakes and I used vegetable broth instead of chicken. I got a lot of complements for this dish on Thanksgiving!

I really wanted to like this but didn't. Good thing I halved the recipe and made my usual stuffing along side of this.

This recipe was outstanding! My husband made this recipe for our Thanksgiving dinner. The shiitake mushrooms gives it a touch of earthiness and the butternut squash that hint of sweet. The combination of sourdough bread and apple cider in the broth makes this recipe pop! Add the rest of the ingredients and you have a mouth full of happiness. This is definately my new favorite stuffing recipe. (Our dinner guests couldn't get enough Thank you Food Network Magazine for something bold and new!
