    Deeeelicious! I am on the Daniel Fast, so I substituted quinoa for the rice, and vegetable broth for the chicken broth, so these two changes shouldn't have really changed up the recipe much at all. But it turns it into a vegan recipe and a complete protein meal. : Yes, to all the other adjectives used in previous reviews: fresh, different, light, easy.. if it were a specialty in a restaurant, I'd order it every time. I was worried about the jalapeno, so only used about 3/4, but didn't notice it at all, so next time (soon! I will use a whole jalapeno.

    This recipe is outstanding! Bright, fresh, flavorful, and VERY easy to prepare. My family loved it. This is as good as any rice I have had in upscale restaurants. This will definitely be my go to recipe. Knowing that Rachael likes really hot spices I used only 1/2 a jalapeno and it was not hot. Next time I will use the whole jalapeno. Rachael knocked it out of the park with this one!

    I made this tonight as a side to tacos. I thought it was great! Very flavorful and refreshing. Next time, i would use vidalia onions, not red onions. It was a little too spicy for my kids to eat because of the onions! I had always wanted to make a rice pilaf, but thought it was hard. This was extremely easy and quick!

    I love this recipe! It gives me a great rice alternative when I make Mexican food. I love traditional Mexican rice, but this is a great recipe that tastes light and fresh. Everyone I have made it for has loved it!

    I made this for a dinner party a while back and everyone loved it. Since then I have used this recipe a lot. I like the tangy lime and tomato mixed with the rice and chicken broth. It's also super easy to make, I would definitely recommend it!

    Such a simple dish, so tasty and goes well as a side to almost anything. I will be making this recipe for years to come. Everyone that has tried it has loved this dish. Thanks Rachel, another great recipe.

    I cannot say enough good things about this recipe! I was so very pleasantly surprised by the full flavor of this simple dish! I paired it with the Fish Tacos with Guacamole Sauce and must admit, I could have just eaten this Pilaf and been satisfied! Great twist on the usual Spanish rice side. I plan to make this every time I make Mexican cuisine from here on out! YUM-O!!!

    I used a brown rice pilaf from a box and added the homemade pico. It was easy and tasted great. I made the fish tacos from the same episode to go with it and it was a wonderful complement.
