    They didn't have orzo at my grocery store so I used a box of rice pilaf. I substituted the water for chicken broth, like Rachael, and added the homemade pico de gallo. This was so good! My boyfriend doesn't like rice and he had seconds! Such an easy delicious recipe! You gotta try it!

    Another fantastic dish from Rachael as always!!! For the person who didn't understand about the salsa. Tthe salsa is the the tomatoes, onions, jalapeno, cilantro, and lime zest and juice that you add to the rice.

    The salsa mentioned in the directions is the salsa you make using the tomatoes, onions, jalapena peppers, cilantro and lime zest, IF you just make the amount called for in the ingredients, you'll want to use all of it. If you make double (as we did, only use half and save the rest for snacking. I'd recommend making a double recipe!

    This is so light and refreshing. I made enchiladas and remembered this side dish. I had been having a box of Orzo in my cabinet for a while and never had the nerve to do anything with it so this recipe was perfect. Even my mom who isn't the biggest mexican food fan loved it. Give it a try!!!

    This recipe is quick, easy, and light. Even my finicky seventeen year old daughter liked it. I used the leftovers the next day, added black beans and turned it into enchiladas. You'll love it!

    We planned on having enchiladas for dinner and I thought this dish would go great with the enchiladas. It was so easy to make and tasted so refreshing and light. I will definitely make it again.

    there is no mention of salsa in the ingrediants list-but it is mentioned in the directions. How much salsa?
