i loved this soup! it was easy and delicious. three changes i made: didn't have any basil so i left it out, added just a little bit of cream to balance out the acidity of the tomatoes, didn't have balsamic vinegar so i used red wine vinegar instead.

Rich, thick and delicious. The balsamic vinegar adds extra zip. I will definately repeat this recipe all winter long.

Nailed it Sunny! Delicious and fun to make. The aroma of the roasting tomatoes/peppers, etc. was wonderful. Move over canned brand, you've been out-souped!

Excellent as is, or as a side with a grilled sandwich. Today I made garlic toast with cheese, cut it up into bite sized pieces and floated those on top for croutons. If I have cream on hand, I'll blend that in, just a bit adds creaminess without too many calories. Next time I'm going to mix up the veg a bit, maybe some chunks of zuccini or squash to add.

Perfect as is, and a good base for creative additions.

I found this a bit bland for my taste, but overall delish. I tweeked it by adding about a cup of salsa and it came out just perfect. Actually, I gave it 4 stars but with a little tweeking, according to your taste, it is a full 5 star soup.

This was YUMMY!!! One tweak, I added 1/4 c. white wine and it gave it just the right flavor. I added chopped fresh basil just before serving and put a dollop of sour cream on top. I had plenty left over, so when I re-heat it, I think I will add cream like brian954. I thought about that as I was making it. I'm sure it will be great as well.

I cut the recipe in half because I thought the kids would not like it, but they did! It was awesome. This is the first tomato soup that had soo much flavor to it. I have made it several times now and my family loves it! Thank you!

Just finished my second bowl - this turned out great. I put extra black pepper and a little cayenne to spice it up a bit. I also skipped the garlic, as garlic isn't kind to my digestive system. Finally, at the end, I added a cup of heavy cream and some orzo to make it a cream of tomato with orzo soup. Perfection. Well done Sunny.

The entire family enjoyed this soup. I made it without the garlic because I completely forgot to include that ingredient...woops. My family still liked it and I will be making it again so I will follow the recipe more closely next time. It also made the house smell wonderful!
