I've baked these cupcakes twice. The first time I made them regular size and the second time I made them as minis. Each time the tops were flaky but the flavor was great. I loved the cinnamon and choc combo! They were moist too. I understand that technique is really important. Any suggestions about how to avoid the crackling on top? I'm teachable........
    Chef one a be!

The recipe is easy enough to follow - but I'm not sure if I did something wrong, my cupcakes came out kinda dry, and the top would just crumble.

I didn't use the mini muffin tin but they came out pretty well. The only problem was that they crumbled, only the top, but it basically fell off. The thing I thought was nice is that I made the meringue and it didn't fluff so I put a thick batter into the chocolate mixture so it turned out like brownies which people found to love. Later I tried the meringue but I beat it on the highest speed on my hand mixer and that worked. So for sure do it on high speed but probably not as long as the recipe counts for. Overall the recipe was pretty good!!

Pretty good. Some of them fell apart when I was taking them out of the pan...maybe that is just because I didn't use mini-muffin cups.

I loved these and I love chocolate as for the falling issue just be sure to fill the cupcake cup all the way to to top, my first batch did fall but I only filled the cup up about 2/3rds of the way like you do traditional cupcakes, my second batch I filled the cups all the way to the top and they came out perfectly.
